 1 cup quinoa, rinsed

 2 cups water or vegetable broth

 1 can chickpeas, drained and rinsed

 1 small sweet potato, diced

 1 tablespoon olive oil

1 teaspoon cumin

Salt and pepper to taste

Mixed greens
